It’s no secret that we’re big on desserts in Texas. However, we usually play it safe with our southern classics like pecan pie, peach cobbler, etc. And there’s nothing wrong with that – those desserts are delicious, after all. But sometimes it’s nice to step outside the box and experience the many interesting culinary creations that exist in the world (or in Texas, for our purposes). - The Volcano at Rainforest Cafe (Galveston)
Yelp/Robert C. This dessert is basically a huge molten lava cake in the shape of a volcano with more chocolate sauce and vanilla ice cream on top. The coolest part, though, is how it’s presented. Whenever someone orders one, the servers stick sparklers in it and bring it to the table yelling “VOLCANOOOO!” The entire restaurant might stare at you, but the deliciousness makes it totally worth it. Mmmmmm, awkward attention.

Most of the time, the meringue is the “topping,” so to speak, not the main part of the pie. That isn’t the case here - but that doesn’t mean the taste is compromised at all. It may be a nutty idea, but it’s sure to satisfy your inner primate. This one is a peanut butter chocolate chip cookie, an oatmeal toffee cookie (yes - you can get two different cookies!) with bunny tracks ice cream in between (that’s vanilla ice cream with fudge swirls and peanut butter cups, by the way).
