If you’ve ever had the pleasure of eating pizza in New York, you may be familiar with the idea that the city’s water is what makes the dough so good. New Yorkers swear by it, and so do the Omaha restaurateurs behind two of the city’s favorite restaurants.

Ansel’s Pastrami and Bagels opened in 2018 in Omaha’s Blackstone District. It’s the brother restaurant of Noli’s Pizzeria, which is owned by the same people.

Ansel’s brings a part of NYC all the way to Nebraska with its house-made bagels. The restaurant partners with a water filtration company to recreate New York’s famous water. It’s a key ingredient in creating these ultra-tasty, bready treats. Another delicious secret ingredient is Scriptown Brewing’s Nutjob beer; the bagels are boiled in it for their signature taste.

This remarkable restaurant was conceived around the quest for the best pastrami - and they’ve nailed it. It starts with all-natural Piedmontese beef that’s cured and seasoned the old-fashioned way. It takes weeks for this pastrami to develop its signature flavor.

And once you take a bite into this massive pile of perfect pastrami, you’ll appreciate just how much work went into it. Pair it with fresh rye bread and a thick smear of mustard and you’ll find an involuntary “Mmm” escaping your lips as you chew.

But Ansel’s has way more to offer. The bread is made using the same dough used at Noli’s pizzeria; the rolls are melt-in-your-mouth delicious and pair wonderfully with all of the sandwich filling options on the menu.
